4 large russet potatoes
4 cups cold water (for soaking)
1 tablespoon salt (plus more for seasoning)
Vegetable oil (for frying)
Instructions
- Prepare the Potatoes: Wash the russet potatoes and cut them into waffle-shaped slices using a waffle fry cutter or mandoline slicer.
- Soak the Fries: Place the slices in a bowl of cold water and let them soak for 30 minutes to remove excess starch.
- Dry the Fries: Drain and pat the fries completely dry with a kitchen towel.
- Preheat the Oil: Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
- First Fry: Fry the waffle fries in small batches for about 2-3 minutes, then remove and place on a paper towel.
- Let Them Rest: Allow the fries to cool for 5-10 minutes.
- Second Fry: Increase the oil temperature to 375°F (190°C) and fry the waffles again for 2 minutes, until crispy and golden brown.
- Season and Serve: Immediately sprinkle with salt and serve hot!
